Recently, I clipped a recipe from the newspaper for "Mango Mustard Barbecue Sauce". It looked delicious and I thought "what the hell...I'm going to throw it on a pork shoulder in the crock pot and make pulled pork sammiches one night for dinner." So, I did. DELISH!!!!! Granted, as is my style, I modified the recipe to fit my "no herbs and no spice" husband. I will warn you...you MUST like mustard!! (it reminds me of Carolina type bbq...yum-o)
3/4 cup mustard
1 cup cider vinegar (I might even cut this down to 1/2 cup next time)
1/2 cup honey
1 TBSP Worcestershire sauce
1 tsp Italian seasoning (It called for dried thyme and dried oregano but I had Ital. seasoning)
1/2 tsp cumin
1/2 tsp cayenne (I WILL add this next time! I didn't this time)
1/2 tsp salt
1/2 tsp ground black pepper
10 oz package frozen mango chunks, thawed (I used mango puree from Trader Joe's (2 little packets) and 1 uber ripe mango that I cut up into chunks)
I combined it all in a bowl and then dumped it over a pork shoulder (I think ours was 4 lbs but I could be wrong) and a sliced onion. Cooked it for 6-7 hours in a crockpot on low and VOILA!! I ladled out about 2 cups of the sauce and cooked it in a saucepan with a slurry of cornstarch and water to thicken it for a sauce. After pulling the pork apart, I spooned some of the remaining sauce (from the crockpot) over it and served it with french rolls.
THIS is a do-over for SURE!!!
